Sam Giddings, Vice Echanson NSW, invites you to the Ordre Mondial des Gourmets Dégustateurs (OMGD), of the Chaîne des Rôtisseurs – NSW Bailliage, at the Redoak Boutique Beer Café in Sydney for a five course beer dégustation on Thursday, 3 April 2014.
OMGD is continuing to offer our members and guests unique crafted beverage events. Our two most recent focussed on wine and cocktails respectively. For this next event the focus will be craft beer.
The Redoak’s Beer Sommelier, Simon Beveridge, will guide us through five specially selected craft beers – each of which will be meticulously matched with a complimenting food course.
This evening is a must for beer fans or anyone interested in a twist on the traditional degustation menu.
Simon has been asked : “What is the best thing about being a beer sommelier?”. His response was informative:
“It’s very unique – there are not many people in this role around the world. Matching beer to food is a great process, and the matches of good food and beer can be amazing. The opportunity to try and critique many beers from around the world is a strong bonus!”

Redoak is operated by the brother and sister duo of David Hollyoak (Master Brewer) and Janet Hollyoak (Restaurateur). The brewery and cafe opened in 2004 with a range of about a dozen beers. In their first year of operation they received 18 awards for their beers in the Australian International Beer Awards (AIBA) – the world’s second-largest beer competition.
Since then they have won over 150 awards including two Gold Medals at the Sydney Royal Easter Show, two Gold Medals at the World Beer Cup 2006 (the world’s largest beer competition) and the Grand Champion Trophy AIBA 2006.
Redoak beers are created using the highest quality ingredients, and contain no additives, preservatives or added sugars. Their beers are not pasteurised and are served fresh. Redoak’s Head Chef offers an amazing selection of dishes to complement and use beer wherever possible.
Redoak encourages their staff and customers to challenge conventional wisdom and think outside the square too. This approach has meant that Redoak was the first to brew an organic pale ale, made Australia’s first ever beer ice-cream, makes its own chocolate beer truffles and brewed Australia’s first Weizen Doppel Bock.
Redoak brews an extensive and ever expanding range of beer styles: Redoak Belgian Chocolate Stout, Redoak Organic Pale Ale, Framboise Froment, Redoak Belgian Choc-Cherry Stout, Rauch, Bock, Baltic Porter, Special Reserve, Kolsch, Berlinerweiss, Belgian Wit Bier, German Wheat Beer, Oktoberfest Lager, to name a few.
The OMGD (often referred to as “Mondial”) is a specific section of the Chaîne des Rôtisseurs. It specialises in and concentrates on crafted beverages.
Put simply, regular Chaîne functions are particularly focussed on fine food, beverages are served to complement the food. By contrast, OMGD functions will focus on and emphasise the crafted beverages themselves – including fine wines, quality spirits, cocktails, beers and cider – pairing them with appropriate food dishes where applicable.
Membership of the OMGD is an option open to any active member of the Chaîne des Rôtisseurs.
