We invite you to a very special dinner. Serge Dansereau has created a menu that pays respect to the diversity of salt and demonstrates his skill in matching it perfectly with his carefully selected produce.
Canadian born Serge Dansereau made his mark in Sydney by setting up Kable’s at The Regent quite a few years ago. In 1999 he created another culinary gem, the Bathers’ Pavilion, a popular restaurant concept on Balmoral Beach, Mosman. His menu reflects his close relationship with the seasons and with his small producers and growers.
A five course meal has been designed in consultation with Executive Chef / Owner Serge Dansereau.
In accordance with La Chaine tradition the meal will be preceded by a glass or two of Champagne.
Fritz Gubler is a salt aficionado and the publisher of The Salt Book. He will share his passion by going back in history to explain the importance of the salt tax in the evolution of modern life and the difference in cooking with the multitude of salts available from all over the world.
